Sindalah became NEOM's first official opening in October of this year, and we spoke to Saudi Chef Rakan Aloraifi about his new opening Ailyn by Rakan 

Part of NEOM, Sindalah is a luxury island and marina focussed resort destination, complete with a professionally designed golf club, luxury beach club in addition to a number of hotels and residences to be run by internationally renowned hospitality brands. As NEOM continues to develop, the opening of Sindalah Island has marked a significant milestone in the realisation of this ambitious project. 

Location, Location, Location

Found in the marina with breathtaking views of the Sindalah Yacht Club, Ailyn by Rakan provides the perfect setting for an unforgettable meal. The restaurant’s relaxed yet sophisticated atmosphere complements its innovative menu. “Our goal is to create a space where guests can feel truly themselves, surrounded by a sustainable environment, while enjoying dishes inspired by the rich flavours of Saudi cuisine,” says Chef Rakan.

Sindalah & Sustainability

Sindalah Island is a model of sustainability, and Chef Rakan has embraced this ethos with his new restaurant's unique concept.

By focusing on whole, minimally processed foods, Ailyn by Rakan delivers a menu that is not only delicious but also healthy and environmentally conscious. "The connection between our dishes and nature is vital," explains Chef Rakan. "This harmony enhances our guests' well-being and reflects the sustainable spirit of Sindalah."

Inspired Décor

The name Ailyn means beauty and brightness in different cultures and contexts, and the restaurant’s interior reflects these qualities. The design incorporates premium materials inspired by Saudi Arabia’s natural landscapes, enhanced by earthy tones and bespoke stoneware table settings. "Every detail has been thoughtfully crafted to connect with the natural beauty of Sindalah," Chef Rakan notes. "The rustic yet refined décor creates an immersive sensory experience for our guests."

The restaurant’s design also honours Saudi cultural heritage by integrating traditional elements such as oud incense burners, Arabic coffee pots, and locally inspired tableware. These details seamlessly blend tradition with modern sustainability, creating a space that is both authentic and forward-thinking.

A Menu of Discovery

The menu at Ailyn by Rakan is a culinary journey through the diverse regions of Saudi Arabia, reimagined with a contemporary twist.

Signature dishes include Jazan-style Maghash with Lobster, Sea Bass baked in banana leaves using a Mandi oven, and Saffron Jareesh with local truffles. Vegetarian options and premium meat dishes round out the offerings, ensuring something for every palate.

Diners can order à la carte or opt for a curated set menu designed for special events. In the near future, Chef Rakan plans to introduce the chef table which offers exclusive dining experiences where he will personally serve seasonal tasting menus, tailored to adventurous guests seeking unique flavours.

The restaurant’s mocktails are crafted with as much care as its dishes. Using locally sourced ingredients such as AlUla citrus, Taif roses, lavender, and traditional Saudi spices, the beverage menu is a celebration of balance and creativity.

Speaking to LIST Magazine, Chef Rakan shares his vision: "Sindalah Island is poised to become a global destination, and opening my restaurant here is a milestone in my career. This is my opportunity to showcase modern Saudi cuisine to the world, combining tradition with luxury in an unparalleled setting."
