Caviar Topped Falafel (Serves 3)

Transforming the iconic and instantly recognisable hotel into a lavish Arabian outdoor palace, the tent boasts a stunning interior, adorned with intricate decorations and a warm, inviting ambiance. Beyond the culinary delights, the Asateer Tent provides a vibrant atmosphere with live entertainment, including traditional music and performances, making it a cherished destination for families and friends to gather and celebrate the spirit of Ramadan.
Found at the Iftar and Suhoor dining experience at the Asateer Tent, this Caviar Topped Falafel recipe combines and elevates the traditional-ness of falafel, by serving it topped with both micro greens and florals, and indulgent pearls of black caviar.
Ingredients:
- 300g of chickpeas or fava beans
- 200g of red onion
- 100g of garlic
- 70ml of water
- 50g of coriander
- 25g of salt
- 20g of caviar
- 10g of cream cheese
- 8g of tahini
- 8g of coriander powder
- 6g of soda powder
- 6g of cumin powder
- Juice of half a lemon
- 1g of micro herbs and flowers
- 1g of dill
- Oil for frying
Method:
- If using dried chickpeas, soak them in water overnight (8-12 hours). They will double in size.
- Drain and rinse the chickpeas before using.
- In a food processor, add the soaked chickpeas, parsley, onion, garlic, cumin, coriander, cayenne, salt, pepper, baking soda, flour, lemon juice, and tahini.
- Pulse until the mixture is grainy but holds together when squeezed. Do not over blend into a paste. If it’s too dry and crumbly, add a little water (1 tbsp at a time).
- Transfer to a bowl, cover, and refrigerate for at least 30 minutes (or up to 2 hours). This helps firm up the mixture.
- Once rested, add the soda powder and mix.
- Once mixed, shape the falafel mixture into small rounds or patties
- Heat the oil in a pan on medium-high until it bubbles softly - and gently add the patties.
- Only fry a small number of patties at a time to avoid over-crowding in the pan, and potential burning.
- When browned on both sides, remove from the pan and place on a piece of kitchen towel to absorb excess oil.
- To serve, add a swash of cream cheese to the plate and add falafel pucks.
- Top each falafel puck with caviar, and decorate with micro greens and flowers.
- Serve with a wedge of lemon for a bust of freshness, and enjoy!

Chef Ali El Bourji is the Executive Arabic Chef at Atlantis Dubai and the creative force behind Ayamna, a leading Lebanese restaurant in the Middle East. Since joining Atlantis, The Palm in 2008, he has overseen modern Arabic menus across the properties and the renowned Asateer tent, catering to massive events including a yearly gala for 4,500 guests and the Air Show set menu for 5,000 international guests. In 2023, he was a key figure in the culinary groundwork for the Atlantis the Royal opening and "Feast of Dreams" event with world-renowned chefs. Chef Ali has also appeared on TV shows like MasterChef Arabia and regularly cooks for royals, government officials, and global celebrities.
