Pineapple Vibes Only Mocktail
This tropical, summer mocktail has been shared by Bungalow 34 is a chic, beach club-inspired restaurant located on Pearl Jumeirah Island in Dubai.
Offering guests a poolside, Mediterranean dining experience with breathtaking sea views, Bungalow 34 is inspired by the European Riviera, embracing a relaxed yet glamorous ambiance reminiscent of the 1970s. With its stylish interiors, curated retail space, and connection to the beach, Bungalow 34 is a blissful escape from the busy city.
You Will Need:
Highball glass
Container
Mocktail Ingredients:
- 5 lemons
- 5 stick of cinnamon
- 5 nutmegs
- 5 star anise
- 600ml of strong black tea
- 300ml of lime juice
- 300ml of pineapple juice
- 600ml of hot water (65°)
- 300ml of milk
- 500g of caster sugar
- 50ml of soda water
Method:
- Peel the lemons, and
- Take the lemon zest and peels, nutmeg, cinnamon sticks, star anise and black tea into a container. Let this mixture sit for 30 minutes.
- Strain the liquid from the spices and lemon peel. Add caster sugar, hot water, lime juice and pineapple juice to the container and stir until the sugar is dissolved.
- Slowly poor the cold milk into the mixture.
- Allow the mixture to sit in the fridge for a few hours, letting the milk curdle (do no stir).
- Fill the highball glass with ice.
- Fine strain the mixture through a coffee filter and pour it slowly over the ice cubes. Top off with soda water.
- Garnish the drink with a banana leaf. And enjoy!
