Slow Cooked Beef with Dates and Shallots (Serves 5)
Vietnamese Foodies, founded by Chef Lily Hoa Nguyen, has become a popular dining destination in Dubai, known for serving authentic and flavourful Vietnamese cuisine. Casual dining done well, Vietnamese Foodies now has multiple locations across the emirates, and the casual dining chain is celebrated for its commitment to fresh ingredients, traditional cooking techniques, and a menu that offers a wide array of Vietnamese dishes, including their signature Pho, which is simmered for 14 hours.
This slow-cooked beef recipe combines traditional Vietnamese cooking and flavours, with an Arabic-inspired flair. With the serving size large enough to feed your immediate family, this dish will become a one-pot wonder that everyone will love.
Ingredients for Dates and Shallot Sauce:
- 800g of beef pho broth prep
- 80g of shallots, keep whole
- 80g of seedless dates
- 40g brown onion, julienne
- 40g of leeks, slice the white part
- 40g of corn oil
- 20g of ketchup
- 8g of ginger, sliced
Cooking Method:
- Heat corn oil in a pot until hot, then add shallots and stir-fry for 5-6 minutes.
- Add ginger, brown onion, and leeks. Stir for 2-3 minutes, then add ketchup and stir quickly for 30 seconds.
- Pour in the beef pho broth prep and add seedless dates.
- Bring the mixture to a boil, then turn off the heat.
Ingredients for Slow Cooked Beef:
- 1.5kg of beef shank (frozen)
- 12g of onion shallots
- 12g of garlic, peeled
- 15g of brown onion
- 12g of leeks
- 10g of fresh ginger
- 7.5g of oyster sauce
- 3g of salt
- 3g of Knorr Chicken Powder (no added MSG)
- 1.5g of black pepper
- 60g dates, de-pitted
- 75 of tomato ketchup
- 75g of corn oil
- 750g of beef pho broth
Cooking Method:
- Marinate beef shank with garlic, salt, oyster sauce, black pepper and chicken powder. Let this sit for 1 hour.
- Heat corn oil over a high heat, then pan sear the beef for 3-5 minutes until browned.
- Add the slow cooked beef with dates and shallots sauce bring to a boil, then reduce to medium heat and stew for 1 hour and 45 minutes. Turn off the heat.
- Allow it to cool down, then divide into portions.
Final Dish Preparation (to serve one)
Ingredients
- 140g of the slow cooked beef
- 190g of the sauce
- 50g of dried seedless dates, slice in half
- 50g of fried whole shallots
- 200g jasmine rice, steamed
- 3g of sweet basil, fried for 5 seconds
Cooking Method for Final Dish
- Place your 140g portion of the prepared Slow Cooked Beef with Dates into a pan.
- Add the dates and whole fried shallots, then heat until boiling.
- Transfer the contents to a black clay pot and garnish with the fried basil leaves.
- Serve with a bowl of steamed jasmine rice.
